Induction cooking is one of the hottest new trends in the foodservice industry and it is not hard to see why. With various benefits – including faster heating times, quicker cooking, and less wasted energy – it is not hard to see why induction cooking has really taken off in recent years.

Cuisinequip, sister company to Valentine Equipment, prides itself in providing high quality induction cookers, which are built using the latest Swiss induction technology, Galaxy Plus. In 2014, a Michelin-starred restaurant located in central London, Kitchen W8, approached Cuisinequip with the goal of getting a bespoke induction unit installed into its kitchen while it was under refurbishment.

The installation took place in September 2014 and the Head Chef at the restaurant, Mark Kempson, and CCE Group were closely involved in the design from the start of the project, to ensure Mark has the exact range that is needed to create the dishes that his customers expect.

The induction cooking range that has been installed into the kitchen consists of two twin multifunction induction hobs, a deep pan griddle, a thermostatically controlled hot cupboard with hinged doors, and a hygienic pan rack. This fully welded construction is designed to give many years of service in a busy environment, and was manufactured in 304 grade stainless steel. This makes the unit easy to clean and maintain in the future, thus extending the lifespan of the range, and maximising value for money.

Mark Kempson commented: “In order to reduce heat, save on energy consumption and improve the efficiency of the kitchen at Kitchen W8, I decided a bespoke induction unit would be best.
